From local dishes to exotic dishes, rice is very popular and a staple food in most parts of the world. Most people like to eat rice every day just for the taste. But rice provides more than 15 essential vitamins and minerals, including folic acid, B vitamins, potassium, magnesium, selenium, fiber, iron and zinc. Brown rice

Brown rice is one of the most recognized whole grains. Interestingly, on average, brown rice has only 1.5 grams more fiber per 1/2 cup dry serving than white rice. Those extra grams of fiber found in brown rice are mostly insoluble, which can be helpful for digestive health by acting as a mild laxative.

Black rice is also known as purple rice, emperor’s rice. This rice has been popular in Eastern cultures for years. Black rice looks black when dried, but turns dark purple after being cooked. The anthocyanins present in it, a type of flavonoid pigment, may be linked to protection against heart disease, cancer, and neurodegenerative diseases.

Black rice is higher in fiber and protein than brown rice. It provides about five grams of protein and three grams of fiber per cup of dry serving. Black rice is best eaten as porridge, rice salad, or fried rice.

Red rice is a honey-colored grain, with a slightly salty and nutty taste. Some existing research has looked at the positive inhibitory effects of red rice on leukemia, cervical and colon cancer cells due to its proanthocyanidin content.

According to a 2016 study in the Journal of Agricultural and Food Chemistry, red rice has antidiabetic effects. The study found a 2.3- to 2.7-fold increase in basal glucose (important for proper blood sugar regulation) with exposure to red rice bran extract. Analysis of different types of rice also shows that red rice contains tocotrienols, a form of vitamin E, which has been linked to neuroprotection, anticancer activity, and cholesterol-lowering properties.
